Walk away with a full belly and a satisfied soul. As R & B pioneer and New Orleans native Fats Domino sings in his timeless hit Jambalaya, “Son of a gun, we gonna have a big fun on the bayou.” Bring your neighbors, and let the good times roll. Red Beans and Rice - $250 A simple, but tasty traditional meal served on Mondays, laundry day, in New Orleans. Legendary piano player Professor Longhair cooked for awhile in a red-beans-and-rice joint; he also gave Elvis Presley his “blue suede shoes voice." Ingredients:
Greasy Greens - $150 Everyone needs a healthy helping of collards. Just ask Tarboro native and harmonica virtuoso George Higgs, who’s “crazy about ‘em.” SOOTS is crazy about Higgs and his cover of Peg Leg Slim’s catchy tune. Ingredients:
Roux - $50 The key ingredient, the roux makes the gumbo different from other stews and soups. According to New Orleans jazz artist Wynton Marsalis, the roux is the foundation and blues is the roux of American music. “You can’t make gumbo without stirring the roux.” Ingredients:
